Recipe Introduction
This is a very easy dessert to make for a dinner party or for a weeknight treat. It is delicious and hits the spot when you want something sweet to comfort you. /jmp
2 1/2 ounces amaretti cookies -- coarsely crushed
-- (about 25 cookies)
3 tablespoons almond liqueur -- divided (such
-- as Disaronno)
1/4 cup salted roasted almonds -- coarsely chopped
or
1/4 cup unsalted roasted almonds -- coarsely chopped
2 ounces bittersweet chocolate -- chopped fine
-- into small chunks
1/2 cup heavy cream
1 pint vanilla ice cream -- softened slightly
-- (microwave on high 15 to
-- 30 seconds)
Place crushed cookies in a medium bowl. Drizzle 2 tablespoons almond liqueur over cookies, toss to coat. Add almonds and chocolate and toss to coat again. Whip cream and remaining 1 tablespoon almond liqueur with an electric mixer to stiff peaks in a medium bowl. Fold softened ice cream into cookie mixture until completely incorporated. Gently fold in whipped cream. Spoon into eight goblets and serve. Or cover and freeze until ready to serve.
