Melon with Tequila & Lime

1 honeydew melon -- preferably chilled
2 tablespoons cold tequila

zest of 1/2 lime -- plus extra to
-- serve (finely grate)
juice of 1/2 lime
2 tablespoons honey
-- (up to 3 tablespoons)
tiny pinch of sea salt
-- (fine)
few mint sprigs (leaves
-- only) chopped
Halve melon; remove seeds with spoon. Using melon baller, scoop flesh into neat balls and place in a large bowl. Mix tequila, lime zest and juice, honey, and salt together in a small pitcher. Taste and add a little more honey if dressing is not sweet enough. Pour over melon balls; toss gently to mix. Chill for at least 10 to 15 minutes. Divide melon balls among serving glasses. Grate over some lime zest and sprinkle with freshly chopped mint.
