1/2 cup cracked wheat
2 large ripe tomatoes -- skinned and finely
-- chopped
1 small onion -- finely chopped
1 cup parsley -- chopped
ground black pepper
2 teaspoons olive oil
2 tablespoons lemon juice
1 tablespoon mint -- finely chopped
Place cracked wheat in a deep bowl, cover with boiling water and allow to stand for 2 hours. Drain well by squeezing in a clean muslin cloth or tea towel, and return to bowl. Add the tomatoes, onion, parsley, pepper, oil, lemon juice, and mint.
Combine well and chill for 1 hour before serving.
