MOR: Moroccan Spiced Turkey Patties

"From the Ground Up", by James Villas
1 1/2 pounds ground turkey
-- (preferably dark meat)
1/4 cup seedless dark raisins
1 tablespoon tomato paste
1/8 teaspoon ground cinnamon
1/8 teaspoon ground ginger
salt
black pepper -- freshly ground
2 tablespoons olive oil
SAUCE:
1/2 cup plain yogurt
2 teaspoons fresh lemon juice
1/8 teaspoon ground cumin
1/8 teaspoon cayenne pepper
OPTIONAL:
1 tablespoon honey*
In a bowl, combine the turkey, raisins, tomato paste, cinnamon, ginger, salt, and pepper, and mix with your hands until well blended (do not overmix). Gently from the mixture into 4 patties about 1 inch thick.
In a large skillet, heat the oil over moderate heat, add the patties, and cook for about 6 minutes. Turn the patties over and cook the other sides till lightly browned, 5 to 6 minutes.
Meanwhile, in a bowl, combine the yogurt, lemon juice, cumin, and cayenne, and mix till well blended.
Serve the patties hot with equal amounts of the sauce spooned over the tops.
*Moroccans love sweet dishes so if you like your sauce sweet, mix the honey with the yogurt and blend with other ingredients. I do not like it too sweet so I just opt to put 1/2 teaspoon in.
