Recipe Introduction
This is a traditional soup from Bulgaria.

Dried white beans: 1-1.5 cups
Onion: 1, diced
Tomato: 2, peeled and diced
Carrot: 1, sliced
Flour: 1 tbsp
Olive oil: 1 tbsp
Dried mint: 1 tsp
Paprika: 1 tsp
Salt
Pepper
Wash and soak the beans in 4-5 cups of water overnight.
Drain the beans. Add 4-5 cups of water to them and bring to boil. Cook for about an hour or until the beans soften.
Saute onion and carrot with oil in a separate pan for 5-10 minutes. Add flour and paprika and cook for 1 more minute then add to the beans. Add tomatoes and mint to the soup. Slightly season with salt and pepper, and stir well. Add more water if needed.
Simmer on a low heat for 15-20 minutes.
Judi's note: Beans will probably require more than an hour to soften. It would be more like 1-1/2 hours. I would use about 6 cups of water for the soup as 4 to 5 cups might not be enough to submerge the beans. In some versions of this soup the cook has added a dash of oregano with the dried mint.
