Lamb Baked in Foil (Psito Arni Sto Harti)

4 pounds tender lamb -- cut in 1-1/2-inch
-- cubes
3 tablespoons olive oil
1 cup onion -- chopped
2 large tomatoes or
1/2 cup canned tomatoes
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon crushed dried mint
8 tablespoons lemon juice
1 pound Feta cheese
Cut aluminum foil into 8 squares about 9 x 9 inches.
Saute meat and onion in olive oil until meat is browned on all sides. Remove meat and set aside. Add tomatoes, salt, pepper, and crushed mint to onions and cook, stirring, for 3 minutes.
Place pieces of meat in center of aluminum foil squares. Pour over it 1 tablespoon lemon juice and spoon over some of the sauce, save rest of sauce. Top with several good size pieces of cheese and wrap tightly in aluminum foil. Place bundles on a large baking sheet and bake 1 hour at 300 degrees F. Turn heat up to 375 degrees, loosen foil, leaving open a few inches and bake another 30 minutes. Add saved sauce and bake 15 minutes more. Serve with rice pilaf.
