Black Bread Charlotka

9 slices stale black bread (pumpernickel)
1/4 pound butter
plus
4 tablespoons butter
1 teaspoon cinnamon
3 cloves -- ground
peel of 1/2 lemon -- grated
peel of 1/2 orange -- grated
2 tablespoons Port wine
2/3 cup sugar
5 apples -- peeled, cored, and
-- thinly sliced
1 cup cherry jam

white bread crumbs
Crumb stale bread. Melt 1/4 pound butter, add bread and fry gently along with cinnamon, cloves, lemon peel, orange peel, wine, and 1/3 cup sugar.
Butter an ovenproof casserole and sprinkle with some of the remaining sugar. Place a layer of white crumbs on bottom, then a layer of bread mixture, then apples. Sprinkle with some of the remaining sugar, then put in a layer of the bread mixture, a layer of cherry jam, apples, sugar, and remaining bread. Smooth over top and sprinkle with any remaining butter, sugar, and white crumbs. Bake at 325 degrees for 35 minutes.
