Mushrooms A La Smetana

1 pound fresh mushrooms -- sliced
2 tablespoons butter
3 tablespoons vegetable oil
1/2 medium sized onion -- diced
1/2 teaspoon salt or to taste
1/8 teaspoon pepper
6 tablespoons sour cream -- up to 8
2 tablespoons dry sherry
In large frying pan put butter and oil and heat over high heat. Add onions and stir fry until dark brown (reduce heat if necessary). Remove from pan and save. There should be quite a bit of oil left in pan, if not, add more and heat to high heat. Add mushrooms (the secret of frying mushrooms is that the skillet should be very hot when the mushrooms hit the pan, otherwise they release too much liquid). Stir fry mushrooms for two minutes (you can reduce heat now) and continue frying for 3 more minutes. Reduce heat to low and add salt, pepper, sherry and onions and mix well. Cook a little longer until most of the liquid is gone.
To serve, add the sour cream and stir well; let it heat up to serving temperature but not to boiling.
Notes: No, this is not named after the composer; smetana in russian means sour cream. I used to hesitate making this dish but after I got a food processor it became a breeze to slice all those mushrooms so thin.
