    Russian Cabbage Borscht

    3 pounds brisket or plate flank of beef
    beef bones*
    6 cups water
    1 1/2 cups diced onions
    2 cans tomatoes -- (29 oz)
    3 pounds cabbage -- coarsely shredded
    1 apple -- peeled and diced
    2 teaspoons salt
    1/2 teaspoon freshly ground black pepper
    1/3 cup lemon juice
    4 tablespoons sugar

    Combine the meat, bones, and water in a deep saucepan. Bring to a boil and skim the top. Add the onions and tomatoes. Cover and cook over low heat 1 hour. Add the cabbage, apple, salt, and pepper. Cook 1 hour. Stir in the lemon juice and sugar. Cook 20 minutes. Taste for seasoning. Serve the meat cut up in the soup or as a separate course.

    Serves 8-10

    *Judi's Notes: The recipe does not specify how much bone to use so use about 1 to 2 lb bones. Add another cup of water here if using 2 lbs.
