    Cucumber Soup

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 small cucumbers
    1 small onion
    parsley -- chopped
    mint -- chopped
    4 teaspoons fresh lemon juice
    1/2 ounce plain gelatin
    1 pint water
    salt
    black pepper -- freshly ground

    Grate the onion and cucumber and mix with the juice, the mint and the parsley.

    Melt the gelatin in a little hot water. Add it to the cucumber mixture. Add approximately 1 pint of water. Season with salt and black pepper

    Chill in refrigerator before serving.
