    Jo Parodi's Biscotti

    Amount Measure Ingredient -- Preparation Method

    3 eggs
    1 cup sugar
    1 cup oil
    1 teaspoon vanilla
    1/2 teaspoon sesame seeds or
    1/2 teaspoon nuts -- chopped
    2 tablespoons baking powder
    2 teaspoons baking soda
    3 cups flour

    Beat eggs and sugar. Gradually add oil and vanilla and sesame seeds or nuts. Beat util thoroughly mixed. Add dry ingredients and mix until smooth. Refrigerate for one hour or overnight. Shape into 3 rolls on cookie sheet. Use a little flour on your hands because the dough will be soft. Bake in 375 degree oven for 20 minutes or until golden brown. Remove from oven. Slice in 1/2 inch think slices while still warm. Place each slice flat on cookie sheet and bake in 250 degree oven. Toast until crisp about 5 minutes.

    Biscotti means cookie in Italian. We always dunk them in coffee or wine or milk. They are mouth melting and wonderful to have in the cookie jar.
