Ricotta Sfinci

BATTER:
1 pound ricotta cheese
2 cups flour
5 eggs
4 teaspoons baking powder
2 tablespoons pure vanilla extract
6 teaspoons sugar
6 cups vegetable oil -- for deep frying
TOPPINGS:
1 teaspoon ground cinnamon mixed with
1/4 cup sugar
OR
1/2 cup honey
2 teaspoons pure vanilla extract -- heat in a small
-- saucepan to thin the honey
In a large bowl, combine all the ingredients for the batter in the order listed and mix until blended. Set the batter aside for 30 minutes.
In a large, deep pot, heat the oil to 350 degrees. Carefully drop teaspoonsful of batter into the oil and fry until the sfinci are evenly golden brown. As soon as they are done, transfer them to a bowl and coat immediately with either of the two toppings or make some of each.
Serve immediately.
