ENT: Cara's Italian Meatloaf

Yield: 4 Servings
1 1/2 lb lean ground beef
1/4 lb hot Italian sausage
1/2 lb mild Italian sausage
1/2 oz dried porcini mushrooms
2 eggs
1/4 cup pine nuts
1/2 teaspoon dried italian herbs
2 cups spinach leaf -- fresh and chopped
1/4 c marinara sauce
Soak mushrooms in hot water for 1 hr. then drain.
Preheat oven to 350 degrees F.
Grease a loaf pan with olive oil then set aside. Combine all ingredients except sauce until thoroughly mixed. Press into your loaf pan. Bake for 45-50 minutes. Remove from oven then allow to rest for 10-12 minutes before serving.
Judi's note: I would add about 1/3 cup fresh or dried bread crumbs to this loaf along with about 1/4 cup water; mix with the rest of the ingredients before forming into a loaf. The recipe does not mention how to use the marinara sauce. I would brush the meatloaf 1/2 way through baking with the marinara sauce and continue to cook until done.
