Fish Steaks Livornese

2 tablespoons extra-virgin olive oil
3 garlic cloves -- finely chopped
1 teaspoon fresh sage -- finely chopped
or
1/2 teaspoon dried sage
1 can peeled tomatoes -- coarsely chopped
--juices reserved (28 oz)
4 fish steaks (cod,
-- scrod, or haddock,
-- 1/2 lb each)
1/4 teaspoon salt
1/4 teaspoon black pepper -- freshly ground
1 1/2 cups fresh or frozen peas
1 tablespoon parsley -- chopped
In a large skillet, heat the olive oil over medium heat. Add the garlic and sage. Stir until the garlic turns golden, about 1 minute. Add the tomatoes with 1/2 cup of the reserved juices and bring to a simmer. Cook until the sauce thickens slightly, about 10 minutes.
Add the fish, salt, and pepper. Cover and cook for 5 minutes. Add the peas and continue cooking until the fish flakes easily, 3 to 5 minutes. Sprinkle with the parsley and serve.
