Pasta with Eggplant Sauce

5 small eggplants
or
1 medium eggplant (about 1 lb)
2 tablespoons olive oil
2 garlic cloves -- crushed
3 shallots -- minced
or
1/4 cup yellow onions -- diced and minced
1/4 teaspoon crushed hot red pepper flakes
2 cups canned imported plum tomatoes -- coarsely chopped
-- with juice
1/4 cup fresh Italian parsley -- chopped
1 pound green fettuccine or linguini
3 tablespoons Parmesan cheese -- freshly grated
Peel and dice eggplant, then soak in salted cold water for 15 minutes. Rinse and pat dry.
Place oil, garlic, shallots, red pepper flakes, and eggplant in a large frying pan. Saute, stirring often, for 8 to 10 minutes. Add tomatoes and parsley and cook for another 10 to 15 minutes.
Meanwhile, cook pasta in boiling water until al dente, then drain. Pour some of the sauce into a warmed serving bowl and add the pasta. Sprinkle with Parmesan cheese and toss. Add the rest of the sauce, toss again, and serve.
Variation: Add 1/2 cup sliced fresh mushrooms and saute with the shallots. The sauce can be made without the tomatoes, using just the eggplant, shallots, garlic, and mushroom mixture with lots of parsley.
