    Peas and Prosciutto, Tuscan Style

    2 tablespoons olive oil
    1 cup onion -- chopped
    1 teaspoon fresh garlic -- minced
    2 ounces prosciutto or -- diced
    Smithfield-type ham or -- diced
    boiled ham
    1 package frozen green peas -- 10 ounces
    1/4 cup chicken broth
    1/2 teaspoon pepper
    2 tablespoons fresh parsley -- chopped

    In a heavy, 10-inch skillet heat oil over moderate heat. Add onion and garlic and cook 3 to 5 minutes, stirring occasionally, until translucent. Stir in ham and cook 1 to 2 minutes, until color changes. Stir in peas, broth and pepper. Cover and simmer 3 to 4 minutes, until peas are tender. Stir in parsley.

    Per serving; 165 calories, 8 grams protein, 9 grams fat, 13 grams carbohydrate.
