Judi's Sweet Potato Casserole

This has been a Thanksgiving tradition for about 30 years now. It gets gobbled up very quickly and doesn't stay around the house very long. It is truly delicious -- hope you enjoy it as much as I do.

Judi's Sweet Potato Casserole

2 cans sweet potatoes
-- (1 lb. 2 oz. each)
1 can pineapple tidbits (13-1/4 oz) -- drained
1/3 cup orange marmalade
1 cup miniature marshmallows
1/4 cup orange juice
1/4 cup dry sherry wine
dash light rum
dash brandy
2 tablespoons light brown sugar
-- (up to 1/4 cup)
1/4 cup raisins
1/4 teaspoon cinnamon (more if needed)
1/4 teaspoon nutmeg
Arrange sweet potatoes in a 10-inch pie plate. Place pineapple in between potatoes and on top of them if there is any left.. Spoon marmalade over sweet potatoes and pineapple. Mix orange juice, sherry, rum, brandy, cinnamon, nutmeg, and sugar together in a small glass bowl. Sprinkle raisins all over the casserole. Pour orange juice mixture over the contents of the casserole.
Bake at 350 degrees for 10 minutes covered with tin foil. Sprinkle with marshmallows and bake for another 20 minutes covered. Remove foil and bake an additional 10 to 15 minutes or until bubbly and done.
Judi's notes; Double recipe and bake in a 3-quart glass oven dish (12 x 9 x 3-inches) Bake a little longer for the larger casserole. I sometimes substitute crushed pineapple for the pineapple tidbits.
