Recipe Introduction
My husband and I are great fans of QVC's Bob Bowersox. He is the resident chef on "In the Kitchen with Bob" televised on Sundays. He has come out with a series of cookbooks and this recipe comes from one of them. It makes use of fresh vegetables that are available at the produce market and is a very good easy soup. Use canned tomatoes if fresh are not available.

Vegetable Basil Soup

2 tablespoons olive oil
1 onion -- chopped
1 celery stalk -- sliced
1 carrot -- sliced
1 potato -- peeled and cut
-- into 1/2-inch cubes
2 cups tomatoes -- peeled and chopped
6 cups chicken or vegetable stock
1 cup cauliflower florets
2 small zucchini -- sliced
1/2 pound fresh or frozen peas
1/3 cup fresh basil
1/2 teaspoon salt*
1/2 teaspoon freshly ground pepper
1 cup grated Parmesan cheese -- for garnish
In a 6- to 8-quart pot over medium heat, warm the olive oil. Add the onion, celery, and carrot, stirring occasionally until they are soft but not brown, about 10 minutes. Add the potato, tomatoes, and stock; cover and simmer for 15 minutes. Add the cauliflower and zucchini and cook for 10 minutes. Stir in the peas, basil, salt,
and pepper and cook for another 5 minutes.
Sprinkle with Parmesan cheese. Serve with garlic bread.
*Judi's notes: I do not use salt but substitute The Spice Hunter's All Purpose Blend (salt free seasoning). It is available at Albertson's Markets in the spice section.
