Skillet Enchiladas

1 1/2 pounds lean ground beef
1 can diced green chilies
2 tablespoons onion -- minced
1 can mild enchilada sauce
1 can cream of chicken soup
1 cup milk
1 package large flour tortillas
shredded Monterey Jack and Colby cheese
In large deep skillet, brown beef. Add green chilies and onion. Lay out tortillas and spoon beef mixture and cheese into tortillas. Roll up and set aside.
Leave a little of beef mixture in skillet and add enchilada sauce, soup and milk. Stir frequently and bring to boil. Put tortillas into pan, cover and reduce heat to medium-low. Let simmer 10 minutes.
Top with cheese and serve.
Note: You may also top with sour cream, guacamole, and shredded lettuce.
