Asian Ginger Chicken

2 tablespoons flour
1/4 teaspoon salt
4 boneless chicken breast halves -- skinned and tender
-- removed (about 5 oz each)
2 teaspoons oil
1/4 cup bottled stir-fry sauce
1/2 cup water
1 tablespoon shredded fresh ginger
1 teaspoon garlic -- minced
chopped cilantro -- for garnish
chopped lime wedges -- for garnish
Mix flour and salt in a plastic food bag. Add chicken and shake to coat.
Heat oil in a large nonstick skillet over medium-high heat. Add chicken and cook, turning once, 5 minutes or until golden and meat is opaque at center. Remove to serving plate. Mix stir-fry sauce, water, ginger, and garlic in skillet. Simmer 2 to 3 minutes until sauce is reduced to about half. Spoon over chicken. Garnish with cilantro and lime wedges.
Note: To make the chicken breasts uniform for even cooking, place them smooth side down and pull off the tenderloin strip (also known as the tender) on top. Freeze strips for future meals.
