Salmon Bake with Pecan Crunch Coating

2 tablespoons Dijon mustard
2 tablespoons butter -- melted
4 teaspoons honey
1/4 cup fresh bread crumbs*
1/4 cup pecans -- finely chopped
1 1/2 teaspoons dried parsley
4 salmon fillets
-- (4 ounces each)
salt -- to taste
black pepper -- to taste
lemon wedges -- for garnish
* Whirl 1 piece of bread in food processor
Preheat oven to 450 degrees F.
Mix together mustard, butter, and honey in small bowl; set aside. Mix together bread crumbs, pecans and parsley in small bowl; set aside.
Remove skin from each salmon fillet with a sharp knife. Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet.
Brush each salmon fillet with honey-mustard mixture. Pat top of each fillet with bread crumb mixture. Bake at 450 degrees for 10 minutes per inch of thickness, measured at thickest part or until salmon just flakes when tested with a fork. Serve with lemon wedges.
Judi's note: I would bake this at 400 degrees F. instead of 450 which is a very high temperature for cooking fish. Adjust the cooking time a little longer because of the lower oven temperature.
