Fillets of Sole with Lemon Swiss Cheese Sauce

2 pounds fillets of sole
salt -- to taste
white pepper -- to taste
paprika -- to taste
1/2 cup butter (1 stick) -- melted
2 garlic cloves -- mashed
3 tablespoons lemon juice
1/2 cup sour cream
1/2 cup grated Swiss cheese
Preheat oven to 350 degrees F.
Arrange the fillets in one layer in a 12x16-inch pan. Sprinkle with salt, white pepper, and paprika. Combine the melted butter, garlic, and lemon juice. Drizzle over the fillets. Combine the sour cream and the Swiss cheese and spread the mixture over the fillets. Bake in oven for about 12 minutes or until the fish flakes easily with a fork. Broil for a few seconds to brown lightly.
Serves 6.
