    How to Roast Green Chiles #1

    6 fresh green chiles
    -- (Anaheim are good)

    Put the whole peppers on a gas barbecue over high flame. Turn the peppers on all sides so that the skins are blistered. Keep turning the peppers so that they do not burn in one spot. After the peppers are roasted, remove from grill and wrap in wet paper towels. Place the chiles in a brown paper bag or plastic bag to steam for 15 to 20 minutes. Remove the chiles from the bag and paper towel. Most of the skin should rub off, but stubborn skin can be scraped with the back of a spoon or a knife.

    If a gas grill is not available, you can broil the peppers and proceed or you can blister the peppers over high heat in a skillet with a little oil.
