1/2 cup sugar
2 teaspoons ground cinnamon
12 teaspoons ground cloves
1/2 cup oil
salt
1 cup honey
3 eggs
1 cup pomegranate or other juice
brandy (optional) -- to taste
1/2 teaspoon ground ginger
1 cup all-purpose flour
1/2 teaspoon baking powder
1 cup barley -- cooked
2 cups raisins
2 cups cut-up dates -- 1/2" cubes
1/2 cup cut-up figs
1/2 cup candied fruits
1/2 cup chopped almonds
Preheat oven to 350 degrees. Grease 10-inch tube pan.
Mix together sugar, cinnamon, cloves, oil, salt, honey, eggs, juice, brandy, and ginger. Add the flour, baking powder, barley, raisins, dates, figs, candied fruit, and nuts. Pour into prepared pan. Bake 1 hour, or until nicely browned.
This is good at room temperature. Serve with lemon sauce or ignite brandy poured over top.
