Cheesy Zucchini Potato Latkes

4 large zucchini (about 2 lb)
2 large potatoes (about 1 lb)
1 medium onion -- grated
1 cup bread crumbs
1/2 cup all-purpose flour
1/2 cup grated cheddar cheese
1 egg -- lightly beaten
1 teaspoon fresh lemon juice
2 garlic cloves -- crushed

1 teaspoon salt
1 teaspoon freshly ground pepper
1 tablespoon sugar (optional)
oil -- for frying
Wash zucchini, trim ends, and grate. Remove as much liquid as possible either in a salad spinner or strain and squeeze in a towel. Peel potatoes and grate or use food processor or blender. Follow instructions for zucchini.
Place zucchini and potatoes in large bowl and add remaining ingredients through sugar. Blend thoroughly. Heat oil in medium skillet over medium heat. Put about 2 tablespoons batter for each latke into hot oil and fry until golden on both sides, turning once. Remove from skillet to paper towels to drain.
