3 sheets matza
1 cup sugar
1/4 cup golden raisins
1/4 cup blanched almonds
1/4 cup unsalted margarine -- melted
-- (1/2 stick)
4 eggs -- separated, at
-- room temperature
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
oil for frying
honey
LEMON SAUCE:
juice of 1 lemon
juice of 1 orange
2 tablespoons potato starch
1/2 cup sugar
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
3 eggs -- separated, at
-- room temperature
Soak matza in water, then press out water. Put matza in bowl. Add sugar, raisins, almonds, margarine, egg yolks, salt, and cinnamon. Beat egg whites until stiff and fold into matza mixture.
Heat oil in medium skillet. Drop mixture into pan by tablespoons to form a kind of pancake. Brown on both sides but don't fry too hard. Remove from pan to paper towels to drain.
Spread with honey while still warm or serve with Lemon Sauce.
FOR LEMON SAUCE: Add water to lemon and orange juices to make 1-1/4 cups. Place in double boiler and add potato starch, sugar, lemon and orange zests, and 3 egg yolks. Bring mixture to a boil, stirring until it thickens. Remove from heat and let cool completely, covered with wax paper. Beat egg whites well and fold into thickened sauce. Spoon over Chremsel.
