Elaine's Apple Cinnamon Latkes

1 egg
3 tablespoons sugar
1 teaspoon ground cinnamon
1 teaspoon salt
3 cups apples -- coarsely chopped
-- (about 3 apples)
3/4 cup all-purpose flour
oil -- for frying
Beat egg until foamy. Add sugar, cinnamon, and salt. Mix well. Add chopped apples to egg mixture a few at a time. Add flour and blend mixture until smooth.
Heat oil in medium skillet over medium heat. Put about 2 tablespoons batter for each latke into hot oil and fry until golden on both sides, turning once. Remove from skillet to paper towels to drain. Cover and keep latkes in 250 degree oven until all are made.
