    2 cups yellow cornmeal (fine or
    -- coarse)
    6 cups cold milk
    4 ounces butter -- cut in pieces
    1 pound cottage cheese or cream cheese

    Mix the cornmeal with about half the amount of cold milk very thoroughly to avoid any lumps. Bring the rest of the milk to the boil and pour in the cornmeal-and-milk mixture, stirring vigorously. Continue to stir with a wooden spoon over very low heat for a few minutes, until all the water is absorbed and the thick paste comes away from the sides of the pan and is almost too thick to stir.

    Remove from the heat and add the butter and cheese. Mash them in and mix well, adding salt to taste. Pour into a greased baking dish and bake in a preheated 350 degree F. oven for 30 to 40 minutes. Serve very hot.

    Variations: You may pour sour cream over it when serving.

    Mamaliga can also be made plain, with water only, and no butter or cheese -- to be served with meat.
