1 cup cornmeal
3 cups cold water
1 teaspoon salt
freshly ground black pepper -- to taste
1 cup low or nonfat cottage cheese
FOR GARNISH:
4 scallions -- finely chopped
1 garlic clove -- minced

2 tablespoons sugar
2 teaspoons sugar
Combine the cornmeal, water, salt, and pepper in a large, heavy saucepan (preferably nonstick). Stirring steadily with a wooden spoon, bring the mixture to a boil over high heat; it will thicken.
Reduce the heat to medium-low (the mixture should bubble slowly) and cook the mamaliga until thick and flavorful. The mixture should come away smoothly from the side of the pan. This will take 10 to 15 minutes. You don't need to stir constantly, but do stir every few minutes to prevent scorching.
Stir in the cottage cheese and scallions and garlic if using. Briskly simmer the mamaliga until the cottage cheese is melted, 3 to 5 minutes. (Don't worry if a few white bits of cheese remain.) Serve the mamaliga at once in bowls or on plates. If serving the sweet garnish, combine the sugar and cinnamon in a bowl and sprinkle the mixture over the mamaliga.
Note: to grill mamaliga, spoon the cooked mush into an oiled baking dish. Refrigerate until firm, 1 to 2 hours. Cut the mamaliga in squares, brush or spray with oil, and grill over a high flame until golden brown, 3 to 5 minutes per side.
