1 cup unsalted margarine -- room temperature
2 cups sugar
6 eggs
2 3/4 cups matza cake meal
3/4 cup potato starch
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup chocolate morsels
1 cup chopped walnuts
Heat oven to 350 degrees. Grease 2 large cookie sheets.
Beat margarine and sugar in large bowl until light and fluffy. Add eggs, 1 at a time, beating after each addition. Fold in cake meal, potato starch, cinnamon, and salt. Stir in chocolate morsels and nuts. Chill 30 minutes.
Divide mixture into 4 equal portions; shape each into a 3/4-inch wide log. Place 2 logs about 2 inches apart on each cookie sheet. Bake about 35 minutes or until golden. Slice when still warm For added crispness, reduce oven to 300 degrees. Arrange cookies cut-side down on cookie sheets and bake until lightly golden, 15 to 20 minutes. Let cool completely.
