    Mixed Vegetable Latkes

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1/2 cup potato -- shredded
    1/2 cup carrots -- shredded
    1/2 cup zucchini -- shredded
    1/2 cup sweet potato -- shredded
    1/4 cup onions -- chopped
    1/4 cup all-purpose flour
    salt -- to taste
    freshly ground pepper -- to taste
    2 eggs -- lightly beaten
    vegetable oil -- for frying
    sour cream or yogurt -- for serving

    Drain excess liquid from shredded vegetables. Combine ingredients through eggs in large bowl.

    Heat oil in medium skillet over medium heat. Put about 2 tablespoons batter for each latke into hot oil and fry until golden on both sides, turning once. Remove from skillet to paper towels to drain. Keep warm in 200 to 250 degree oven until all are cooked. Serve with sour cream or yogurt.
