6 bell peppers -- seeded with
-- 1/2 inch of top cut off
-- 2 green, 2 red, and
-- 2 yellow
2 tablespoons oil
2 onions -- diced
2 cups canned tomatoes
2 teaspoons sugar
3 teaspoons salt
1/2 teaspoon pepper -- freshly ground
1 pound ground beef
3/4 cup rice -- cooked
4 tablespoons grated onion
1 egg
3 tablespoons cold water
3 tablespoons honey
1/4 cup fresh lemon juice
1/4 cup seedless raisins
Pour boiling water over bell peppers to cover and let soak 15 minutes. Heat oil in an ovenproof casserole just large enough to hold the peppers snugly. Lightly brown sliced onions. Add tomatoes, sugar, 1-1/2 teaspoons salt, and the pepper. Cook over low heat, covered, 30 minutes.
Mix beef with rice, remaining 1-1/2 teaspoons salt, the grated onion, the egg, and cold water. Place some meat mixture in each drained pepper and stand peppers in sauce. Cover and cook over low heat 45 minutes. Add honey, lemon juice and raisins and cook uncovered 30 minutes longer.
