    Vegetarian Chopped Liver #1

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    3 tablespoons unsalted margarine
    1 cup fresh mushrooms -- sliced
    1 cup onions -- chopped
    3 eggs -- hard-cooked
    1/4 pound walnuts
    1 teaspoon salt
    1/4 teaspoon freshly ground white pepper
    lettuce leaves -- for garnish
    tomato wedges -- for garnish

    In a large skillet, melt margarine over low heat. Add mushrooms and onions and saute until onions are golden.

    Pass mushrooms, onions, hard-cooked eggs, and walnuts through a grinder or chops very fine in a copping bowl. Season with salt and pepper. Chill thoroughly. Serve on lettuce leaves and garnish with tomato wedges.

    Note: 1 pound of walnuts equals 3-1/2 cups chopped.
