Company Affair Lamb Chops

3 tablespoons butter
3 tablespoons flour
1 cup rich beef stock
1/4 cup smoked pork loin -- diced
or
Canadian style bacon or
lean ham
1 tablespoon butter
1/4 cup sherry
2 tablespoons green pepper -- minced
6 slices eggplant -- cut 1/2-inch thick
-- unpeeled
olive oil
6 lamb loin chops
6 mushroom caps -- broiled
Melt butter in saucepan; add flour and cook until lightly browned. Gradually add beef stock and cook sauce until smooth and thick.
Combine bacon and butter in skillet and fry at least 2 minutes. Add sherry and green pepper and add to sauce. Brush eggplant with olive oil and broil until lightly browned. Broil lamb chops so that they are pink and juice inside and crisply browned on outside.
Pour hot sauce over eggplant slices and place one lamb chop on each slice of eggplant. Garnish with a mushroom cap.
