Lamb Stew W/Dried Tomatoes And Couscous

2 pounds boneless lamb shoulder -- trim fat,
-- cut in bite-size

3/4 cup oil-pk sun-dried tomatoes -- drain,
-- reserve oil from
-- tomatoes
10 small white boiling onions -- halve
2 cloves garlic -- crushed
1/2 teaspoon dried marjoram
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1/2 teaspoon dried oregano
1/8 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 cup dry red wine
1 cup pitted prunes
1 box instant couscous (10 oz)
In large skillet, brown lamb pieces in the oil reserved from the tomatoes. Add onions before lamb has finished browning and saute until soft. Add garlic and stir for a minute. Add seasonings and wine. Cover and lower heat to simmer. Let cook 20 minutes, stirring once. Add prunes and tomatoes and simmer until heated through.
While prunes and tomatoes are simmering, make couscous per package instructions. Serve the stew over the hot couscous.
