4 halibut steaks (4 oz each) -- cut 3/4-inch thick
1/3 cup onion -- finely chopped
1 garlic clove -- minced
2 tablespoons snipped fresh parsley
1/2 teaspoon orange peel -- finely shredded
1/8 teaspoon ground black pepper
1/4 cup fresh orange juice
1 tablespoon fresh lemon juice
Preheat the oven to 400 degrees. Arrange the fish in an 8-inch x 8-inch baking dish and set aside.
Lightly coat an unheated small skillet with nonstick spray. Add the onion and garlic. Cook and stir over medium heat until the onions are tender. Remove the skillet from the heat. Stir in the parsley, orange peel, and pepper. Spread the onion mixture on top of the fish.
In a small bowl, stir together the orange and lemon juices. Then pour the juice mixture over the fish. Cover with foil and bake for 10 to 15 minutes, or until the fish flakes easily when tested with a fork.
Per serving: 140 calories, 3 g fat, 36 mg cholesterol, 0.4 g fiber, 63 mg sodium
