2 cups all-purpose flour
1 tablespoon baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 egg
3/4 cup milk
1/3 cup liquid honey
1/4 cup Kirsch (cherry brandy)
1/4 cup vegetable oil
1 teaspoon lemon zest -- finely grated
1 teaspoon orange zest -- finely grated
1 cup almonds -- toasted and chopped
Preheat oven to 375 degrees F. Grease a 12-cup muffin pan.
In a large bowl, whisk together flour, baking powder, cinnamon, salt, nutmeg, and cloves.
In a medium bowl, whisk together egg, milk, honey, Kirsch, oil, lemon zest, and orange zest until well blended.
Divide batter equally among prepared muffin cups. Bake in preheated oven for 24 to 28 minutes or until a toothpick inserted in the center comes out clean. Let cool in pan on a wire rack for 5 minutes, then transfer to the rack to cool.
Makes 12 muffins
