CORN: Creole Corn muffins

1 1/2 cups flour -- sifted
1 tablespoon baking powder
1 teaspoon salt
3 tablespoons sugar
3/4 cup yellow corn meal
1 egg -- well beaten
1 cup milk
1/4 cup shortening -- melted
1 tablespoon green pepper -- finely chopped
1 teaspoon onion -- finely chopped
-- (up to 2 teaspoons)
1/2 cup Cheddar cheese -- grated
Grease a 12-cup muffin pan.
Sift flour with baking powder, salt and sugar; add corn meal and blend well.
Combine beaten egg, milk and melted shortening. Vigorously stir liquids into dry ingredients until all flour is dampened. Add green pepper, onion, and shredded cheese. Pour batter into greased muffin pans. Bake at 400 degrees F. for 25 to 30 minutes.
Makes 12.
