    Jalapeno Corn Muffins

    Amount Measure Ingredient -- Preparation Method

    1 1/2 cups yellow cornmeal
    1 tablespoon baking powder
    1 tablespoon sugar
    1 teaspoon salt
    1 cup milk
    2 eggs
    1 can creamed corn (8-1/4 oz)
    1/4 cup butter -- melted
    1 1/2 cups grated cheddar cheese
    3 Jalapeno peppers (up to 4) -- finely chopped

    Preheat oven to 425 degrees F.

    Stir cornmeal, baking powder, sugar, and salt. Mix in milk, eggs, corn, and butter. Add cheese and peppers. Stir just to combine. Grease 18-cup muffin tin and heat 3 to 5 minutes. Remove from oven and fill each cup two-thirds full with batter.

    Bake 20 minutes. Tops will be golden brown and muffins will be slightly moist inside.
