    Caraway Cheese Muffins

    Amount Measure Ingredient -- Preparation Method

    1 cup rye flour
    3/4 cup all-purpose flour
    1/4 cup sugar
    2 1/2 teaspoons baking powder
    1/2 teaspoon salt
    1 egg -- beaten
    3/4 cup milk
    1/3 cup cooking oil
    3/4 cup cheddar cheese (3 oz) -- shredded
    1 1/2 teaspoons caraway seed

    In large mixing bowl, stir together the flours, sugar, baking powder, and salt. Make well in the center.

    In a small bowl, combine egg, milk, and oil. Add egg mixture all at once to flour mixture. Combine cheese and caraway seed; fold into batter. Grease muffin cups or line with paper bake cups; fill 2/3 full. Bake in a 400 degree oven for 20 to 25 minutes or till golden. Remove from pans; serve warm.

    Makes 12 muffins.
