Honey Almond Oat Muffins

Recipe Introduction
These good for you muffins contain almonds which are rich in managanese, vitamin E, and magnesium. Almonds are also a great source of protein.
1 1/2 cups whole wheat pastry flour
3/4 cup quick-cooked rolled oats
1/4 cup ground flax seeds
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2/3 cup liquid honey
3 tablespoons vegetable oil
1 teaspoon almond extract
1 cup low-fat (1%) plain yogurt
1/4 cup low-fat (1%) milk
1 cup almonds -- toasted and
-- chopped
Equipment: 12-cup muffin pan, greased
Preheat oven to 400 degrees F.
In a large bowl, whisk together flour, oats, flax seeds, baking powder, baking soda, and salt.
In a medium bowl, whisk together egg, honey, oil, and almond extract until well blended. Add the egg mixture to the flour mixture and stir until just blended. Gently fold in almonds. Divide batter equally among prepared muffin cups.
Bake in preheated oven for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Let cool in pan on a wire rack for 3 minutes, then transfer to the rack to cool.
Makes 12 muffins
