    Cinnamon Pear Muffins

    Amount Measure Ingredient -- Preparation Method

    3 cups pears -- peeled and diced
    3/4 cup granulated sugar
    1/2 cup vegetable oil
    2 eggs
    2 teaspoons vanilla
    2 cups all-purpose flour
    2 teaspoons baking soda
    2 teaspoons cinnamon
    1 teaspoon ground nutmeg
    1 teaspoon salt
    1 cup raisins
    1 cup walnuts or pecans -- chopped

    Preheat oven to 400 degrees F. Grease or paper line a 12-cup muffin tin.

    In a bowl combine pears and sugar.

    In a large bowl whisk together oil, eggs, and vanilla. Add pear mixture and blend well.

    In another bowl combine flour, baking soda, cinnamon, nutmeg and salt. Add to oil mixture and stir just until moistened and blended. Do not overmix. Fold in raisins and walnuts. Spoon batter into prepared muffin tin, filling cups to the top. Bake in preheated oven for about 20 minutes.
