2 cups flour
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon cloves
1/2 teaspoon salt
1 cup sour milk* or buttermilk
3/4 cup molasses
1/4 cup vegetable oil
2 eggs
1 pear -- peeled, cored and
-- sliced
Preheat the oven to 375 degrees F.
In a bowl, stir together flour, sugar, baking powder, cinnamon, ginger, cloves and salt. In a glass measure, beat together the milk, molasses, oil and eggs. Add to the flour mixture all at once; stir just until dry ingredients are moistened. The batter will be lumpy. Fold in the pear. Spoon batter into greased muffin cups. Bake for 20 to 25 minutes until toothpick inserted into center muffin comes out clean. Let cool in pan on wire rack for 10 minutes. Remove muffins from pan and let cool on wire rack.
* To sour milk, pour 2 tablespoons lemon juice or white vinegar into a glass measure; add milk to measure 1 cup.
