    "400 Calories Meals" (Rodale, Inc.)

    2 cups all-purpose flour
    1/2 cup sugar
    1 tablespoon baking powder
    1/2 teaspoon salt
    1/2 teaspoon ground cinnamon
    2 eggs
    1 cup strawberry blended yogurt
    1/4 cup buttermilk
    1/4 cup melted butter
    1/2 teaspoon almond extract
    1 cup frozen raspberries
    or
    1 cup frozen blackberries
    or
    1 cup frozen blueberries

    Preheat oven to 400 degrees F. Coat 12-cup (3-1/2 to 4-inch diameter) muffin pan with cooking spray.

    Combine flour, sugar, baking powder, salt, and cinnamon in large bowl. Whisk eggs, yogurt, buttermilk, butter, and almond extract in medium bowl. Fold egg mixture into flour mixture, until just mixed. Fold in frozen berries gently.

    Spoon into muffin pan. Bake 15 to 20 minutes, or until wooden pick inserted into center of a muffin comes out clean.

    Makes 12 servings

    Each muffin provides 180 calories, 4 g protein, 30 g carbohydrate, 1 g fiber, 5 g fat, 250 mg sodium
