Turkish Charoset

2 sweet red apples
-- (1/2 pound)
1/2 pound pitted dates
1 cup raisins
1 orange -- juice and
-- grated zest
3 tablespoons sugar -- or more
1 cup Passover wine
1/4 cup walnuts -- chopped
Simmer all ingredients except walnuts and sugar in a medium saucepan on low heat until very soft. Add sugar to taste. Cool slightly and blend in processor. Add walnuts.
Makes 3 cups
