AH: Greek Chicken with Angel Hair Pasta

1 pound angel hair pasta (uncooked)
1 tablespoon olive oil
4 boneless chicken breast halves -- skinned, each
-- cut in half (6 oz each)
2 cups red onion -- chopped
1 cup yellow bell pepper -- chopped
6 tablespoons fresh lemon juice
1 teaspoon dried basil
1/2 teaspoon dried oregano
2 cans diced tomatoes* --
(14.5 oz each)
3/4 cup feta cheese -- crumbled
-- (3 ounces)
* Use the cans of diced tomatoes with basil, garlic, and oregano
Cook pasta according to package directions, omitting salt and fat.
Heat oil in a large nonstick skillet over medium-high heat. Add chicken to pan; saute 3 minutes on each side. Add onion and next 5 ingredients to pan; stir well. Cover, reduce heat, and simmer 25 minutes or until chicken is done. Remove from heat; sprinkle with cheese. Serve with pasta.
Yield: 8 servings
Serving size: 1/2 chicken breast, about 1/2 cup tomato mixture, and about 1 cup pasta.
