    Cafe Bellino's Linguine Mariano

    1 cup water
    3 dry-packed dried tomato
    halves*
    1/4 cup extra-virgin olive oil
    6 tablespoons unsalted butter -- cut in 1"
    1 chicken breast half -- boneless, skinless,
    -- cut into
    -- 1/2-inch-wide strips
    1/2 cup small fresh broccoli florets
    1 sprig fresh rosemary
    salt -- to taste
    coarse ground black pepper -- to taste
    2 1/2 ounces fresh linguine -- cooked according to
    -- package directions
    -- and drained

    Bring water to boil in a nonreactive pan or in a glass measure in the microwave. Remove from heat and add tomato halves. Let sit 3 minutes or until plumped.

    Drain and cut each tomato half into three strips. Place in a nonreactive container and cover with oil. Let tomato strips soak in oil for at least three hours or refrigerated up to a week. When ready to cook, drain the tomatoes from the oil and set aside (reserve oil for another purpose).

    In a medium nonreactive skillet over medium-high to high heat, heat the butter, swirling the pan and watching it constantly so that the butter browns to a deep rich color but does not burn. This will take 1 or 2 minutes. Add the tomatoes, chicken, broccoli, rosemary, salt and pepper. Cook, constantly stirring or swirling the pan, about 3 minutes or until the chicken is cooked through and the broccoli tender crisp.

    Add the linguine and toss to coat with browned butter. Serve immediately.

    Makes 1 serving.

    *If you prefer, you can purchase dried tomatoes packed in olive oil.

    Just drain and use. No need to plump the tomatoes in water or marinate them in oil. Cut each tomato half in three strips.
