Three Pepper Linguine

1 large red bell pepper -- coarsely chopped
1/2 chopped onion
2 garlic cloves -- minced
2 tablespoons olive oil
1/2 cup grated Parmesan cheese
1 green bell pepper -- chopped
1 yellow bell pepper -- chopped
1 cup plum style tomatoes -- drained and chopped
9 ounces spinach linguine or
9 ounces angel hair pasta
Saute peppers, onion and garlic in olive oil in large skillet until soft, about 6 minutes. Add tomatoes and simmer 7 minutes. Cook linguine and drain. Toss in Parmesan cheese and divide evenly among 4 plates. Spoon bell pepper sauce over pasta and sprinkle additional Parmesan cheese if desired. A complete meal.
Judi's note: I would add 1/4 teaspoon dried basil and freshly ground pepper to this sauce when adding tomatoes.
