Ziti with Creamy Walnut Sauce

1 pound ziti pasta
1/2 cup low-fat ricotta cheese
1/2 cup skim milk
1/2 cup toasted walnuts
1/4 cup nonfat sour cream
1 small garlic clove
2 tablespoons fresh basil leaves
2 tablespoons fresh parsley leaves
1/4 teaspoon grated lemon rind
salt
ground black pepper
1/4 cup fat-free chicken broth or
vegetable broth
6 tablespoons grated Parmesan cheese
Cook the pasta in a large pot of boiling water according to the package directions.
In a food processor, combine the ricotta, milk, walnuts, sour cream, garlic, basil, parsley, and lemon rind. Process until smooth. Season with the salt and pepper.
Drain the pasta and place in a large bowl. Add the broth and toss to coat. Pour the sauce over the pasta and mix well. Sprinkle with the Parmesan.
Each serving provides:
418 calories, 9.9 g total fat, 18.6 g protein, 63.6 g carbohydrates, 0.4 g fiber, 5 mg. cholesterol, 237 mg sodium
Judi's notes: Do not use nonfat ricotta cheese here because it does not have a good flavor. Stick to the low-fat variety (Polly-O is my favorite) Also, I do not like the nonfat sour creams on the market so when making it you might consider the regular sour cream if you are not that concerned about the fat content. It uses such a small amount in the recipe and makes it taste so much better.
