    Butter Pie Crust

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 1/4 cups all-purpose flour
    1 teaspoon salt
    2/3 cup solid vegetable shortening -- chilled
    5 tablespoons salted butter -- cut into small
    -- pieces
    7 tablespoons water

    Sift flour and salt together in large mixing bowl. Cut in shortening and butter until mixture resembles cornmeal. Sprinkle water over mixture. Blend gently until all ingredients are moistened and dough holds together.

    Divide dough into two portions. Chill dough. Place one portion on floured surface, roll to 1/8-inch thickness using a light hand. Place in pie pan, fill with desired filling and roll out second portion and top.

    Note: If baking an unfilled pie crust bake at 425 degrees F. for 20 to 25 minutes, pricking with fork.

    Enough dough for one double-crusted pie.
